The difference:

End grain cutting boards let the wood fibers run vertical, and create more resistance to showing cut marks over time, as well as being more durable to accidental dropping. While Edge Grain cutting boards the wood fibers run horizontal and tend to show knife marks sooner and have a higher tendency to warp over time due to natural wood movement and moisture.
